It’s been a very domesticated Sunday for me. For some reason I woke up and just wanted to be in the kitchen which has not happened in some time. I blame winter 😂
Dinner’s in the slow cooker and I made some delicious Chocolate Coconut Energy Bites for snacks this week. These little decadent balls are perfect for those chocolate cravings plus yummy coconut! Is it just me or do you associate coconut with summer? Wishful thinking!! Recipe below:
Chocolate + Coconut Energy Balls
Ingredients
- 1/4 cup unsweetened cocoa powder
- 1/4 cup raw unsalted almonds
- 1/4 cup unsweetened coconut
- 1/4 cup Manitoba Harvest Hemp Heart Toppers Coconut & Cocoa (or 1/4 cup regular Hemp Heart would work too!)
- 1 cup medjool dates
- 1/4 tsp coconut oil
- 1/2 tsp pure vanilla extract
- 1 tsp honey
- 1/2 tsp water (for added moisture)
Directions
- Add cocoa powder, almonds, coconut, hemp toppers in a food processor or blender (I used my ninja blender cup) and process until almonds are crushed
- Add remaining ingredients and process until all combined
- Take a heaping teaspoon size of the mixture into your hands and roll a bite size ball
- In a small bowl or plate, sprinkle some unsweetened coconut and hemp toppers to roll your balls in to finish them off
Makes approx. 12-14 balls
