It’s been a hot minute since I’ve had some free time to sit down and write a post. And when I say free time, I mean I am currently neglecting my long list of to-do’s… Don’t worry, it will still be there waiting for me when I am done here.
We’re still seeding. The Farmer figures we should be done by next week sometime. It feels like it has been going on forever. We got about an inch of rain last week that put us on hold for a couple of days and we’re expecting some more this weekend. We definitely need the moisture so we aren’t complaining.
Between seeding and becoming a Goat Boss, I’ve been able to whip up a few meals that I’d like to share with you. As some of you may have seen on Instagram, I recently took the plunge and purchased an Instant Pot. I was hesitant for so long about getting one since I didn’t know if I would use it that often. But after watching a few YouTube videos, looking at recipes, and reading the reviews I bit the bullet and ordered one. My only complaint about the Instant Pot is that I should have ordered one sooner!! It has come in handy throughout seeding. I think last night (and tonight) was the first meal(s) I haven’t cooked something in it. In case you’re wondering, I purchased the Instant Pot Ultra 6 qt model from Amazon.
Here’s a few of the recipes I have tried so far in my Instant Pot, plus some other field meals that I’ve whipped up recently:
BBQ Chicken Sandwiches: This was my first attempt at using my Instant Pot. The chicken turn out tender and juicy! If you’re looking for a time saver, use your stand/hand mixer to shred your chicken. Saves time instead of shredding it with a fork!
8 Minute, One Pot Spaghetti – Yes, it’s as simple as it sounds! No boiling, no draining. Easy!
Whole Frozen Chicken – Y’all, this was the real test for me. A whole frozen chicken in one hour? Let me tell you friends, I have been a believer ever since!

Honey Garlic Meat Balls: These were SO good! And what made them even better was they’re a recipe from a fellow farmwife 🙂
Taco in a Bag (in a Box): Quick, easy, and basically healthy because it’s considered a salad and all… Instead of putting the taco salad into a bag I just used my handy environmentally friendly take-out containers instead. It made it WAY easier to transport to the field.
